About Xanthan Gum
Xanthan is supplied as an off-white to cream, free-flowing powder. It hydrates in cold water, builds viscosity at low use levels, and is generally tolerant of pH, heat and freeze-thaw conditions, though behaviour depends on the system it goes into and should be confirmed by trial. It also shear-thins, so a product pours and pumps easily under agitation and then recovers its body once it is back at rest.
Xanthan is supplied dry in lined sacks and cartons. It disperses best under agitation, or dry-blended with another ingredient before wetting, which keeps it from lumping when it hits water. Grades differ in how quickly they hydrate and how much body they build, so tell us the system you are thickening and it will be quoted against that. Bulk and private-label packing are available.

How do we stop it lumping when we disperse it?
Add it under active agitation, or dry-blend it with sugar, salt or another dry ingredient before it meets water. Xanthan hydrates fast, and lumps form when a dry mass wets on the outside first.
Will it hold up in acidic or hot products?
Xanthan is generally chosen for its tolerance of pH, heat and freeze-thaw conditions, but the result depends on your full system. For a demanding system, run a trial with sample material before committing to a production quantity.
