About Coriander Seeds
Seed is cleaned, sieved and de-stoned, then graded, with light seed, stalk and extraneous matter separated out. Polishing is applied where a buyer wants a brighter, more uniform seed. Because coriander's aroma is carried in a light volatile oil, the seed is kept whole for as long as possible and milled only when a ground delivery has been ordered.
Coriander is offered whole or ground, in bulk export packing for mills and processors and in cartons or retail and private label packs for repackers. Seed type, cleaning standard and grind are agreed before the order is confirmed. Loading, packing marks and the documentation set that travels with the consignment are arranged with the buyer's forwarder.

Both. Whole seed is the standard trading form, and ground coriander is milled against an order for blenders who prefer to buy it ready-milled rather than grind in house.
